Lucas Molbert, General Manager of Galatoire’s Bistro of Baton Rouge

In a place where business meetings convene, family and friends dine together and celebrations ensue, it takes a people person to manage the energy of such a diverse crowd on any given day of the week. That is exactly the business climate Lucas Molbert, the general manger of Galatoire’s Bistro of Baton Rouge, was looking for when he got into the restaurant industry his senior year of college. Since the iconic New Orleans institution opened its doors to Baton Rouge in 2013, Molbert has been working to recreate the tradition and brand established in the Big Easy back in 1905 with a modern spin unique to Baton Rouge residents.

  1. Jumping into the restaurant industry in 2004, Molbert is no stranger to his trade. In fact, he is a natural. Molbert says his most satisfying professional accomplishment was being the first person in the history of Ruth’s Chris Baton Rouge to move up the ranks from busboy to manager in just two years.
  1. Molbert’s favorite part about his job to date is having been a part of opening an iconic institution and now serving the New Orleans tradition to Baton Rouge customers each day. In his line of work, attention to detail is key as he manages everything from bussing tables to building and catering to a regular clientele.
  1. When soft-shell crabs are in season, you can bet that’s what Molbert is ordering. They are flash fried topped with jumbo lump crab and barbecue beurre blanc Sauce. “It brings back memories of enjoying them with my father on fishing trips while growing up,” Molbert says.
  1. Don’t sell yourself short—Molbert says this is the best piece of advice he has ever received, courtesy of his wife, Renée. “You have to put yourself out there in the mix,” Molbert says. Striving to live by these words each day, Molbert caters to the expectations of his dedicated and loyal guests as well as new comers to the iconic restaurant.
  1. Apart from its prime location near the busy corner of South Acadian Thruway and Perkins Road, Molbert says Galatorie’s full service bar and patio dining sets it apart from other restaurants in Baton Rouge, and even the original New Orleans location. “Especially on Wednesday nights with Eric Baskin and for Sunday brunch with Brandon Routh for live entertainment combined with our one of a kind bar program,” Molbert says.
