The owners of a gluten-free, dairy-free catering service plan to open a bakery and deli in about six weeks in the Southdowns Shopping Center. Erick and Ainsley Coughlin chose Southdowns for Truly Free Bakery & Deli, which has been shipping desserts to the health-conscious from Houston to Los Angeles and Seattle since July. Southdowns is “a high-traffic area near LSU with a lot of families in the area,” Ainsley Coughlin says. Truly Free will have treats for special dieters such as celiac patients, vegans, the lactose-intolerant and those with rare food allergies. With a menu that includes ooey gooey fudge brownies, organic peanut butter cookies, blueberry muffins, tortillas by the dozen, creole corn bread, southern biscuits and pineapple birthday cakes, the deli will be open every day from 10 a.m. to 8 p.m. For more information, visit their Web site trulyfreebakery.com.—Rebecca Breeden
