Carrolls taking Louisiana cuisine to James Beard House

The recognition hasn’t stopped for Cody and Samantha Carroll.

The cooking couple wooed the Capital Region with its food at Hot Tails in New Roads. In addition, the Carrolls have just opened their second restaurant, Sac-a-Lait, in New Orleans.

As 225 reports in a feature from the current issue, right after opening the Crescent City restaurant, the Carrolls were invited by The James Beard Foundation to cook this fall at the James Beard House in New York City. They are one of the youngest couples ever invited.

The high-profile dinners are meant to highlight up-and-coming chefs from across the country. Only a handful of invited chefs have hailed from the Capital Region. The Carrolls are scheduled to cook on Oct. 1.

Cody says the dinner in New York won’t be any different than what he would make in Louisiana.

“The goal is to show them real Louisiana food,” he says. “We’re shipping ingredients we’d always use, and we’re bringing our chefs so we can show them how we cook down here in Louisiana.”
