It might be a while before you can grab a kolache at a popular restaurant’s new location on Jefferson Highway.
Will Edwards, owner of The Kolache Kitchen on Nicholson Drive, tells 225 Dine his second location in the former Popeyes chicken site next to the LaRouge Mart on Jefferson Highway is still 4 to 6 weeks from its opening. Edwards’ original target date was mid-March, but he says remodeling took a little longer than expected and he’s waiting for some permits to be issued.
“We took all the Popeyes equipment out and separated the kitchen from the service area,” Edwards says. “We did all the branding, painted the inside and outside and put new countertops inside.”
The new site is a bit smaller than the Nicholson Drive Kolache Kitchen. However, Edwards say he will utilize the drive-thru as much as possible and have two registers inside to give the business more of a to-go atmosphere. He says also is adding to his staff at the original location to make the transition go smoothly.
“It’s becoming more and more of a reality every day,” he says. “I’m getting excited about it.”
The new location will also have extended hours into the late afternoon and early evening, an all-day, full-service menu and a lunch menu with five to seven sandwich options. The staple, however, remains the kolache, pastry filled with meats, cheese or fruit.
