Hungarian pastry shop slated for LSU area
LSU alumnus Will Edwards is bringing the classic Central European kolache, a popular pastry in his native Houston, to Baton Rouge with the Kolache Kitchen in late July. Edwards, a May 2011 graduate, will convert the former Blimpie sandwich shop at Nicholson Drive and East Boyd Drive into his pastry shop. A kolache is a pastry about the size of a hot dog bun and filled with a variety of ingredients: "Traditionally, they're filled with sausage, cheese or fruit," Edwards says. The convenient consumption of a kolache and the store's proximity to LSU campus are expected to satisfy the busy student, the proprietor believes. "There's very little on-the-go breakfast competition around here, outside of fast food," Edwards says. "[Kolaches] are sold in a couple places around here, but it's different. They're essentially just big pigs-in-a-blanket, which is not what a kolache is. Kolaches are kind of like the beignets of central Texas." Edwards says there are more than 40 kolache-related businesses in the Houston area, and The Kolache Kitchen will soon be associated with LSU. —Frederick Holl
